饭店服务质量管理必须制定出明确的质量标准,但是由于饭店产品是由无形产品和有形产品组成,对于无形产品很难定出一个明确的标准,有人认为宾客满意程度就是服务质量的标准,可是宾客情况千差万别,各有各的要求,因此宾客满意程度有高有低,它不是一个明确的稳定的标准.根据我们的质量管理经验,通过对饭店各个部门各个岗位定出具体的服务规程,明确、规范饭店无形的服务,以描述性语言为质量标准,这是一个比较好的方法.强化企业全员服务意识:服务质量是一个综合性的概念,它是指饭店向宾客提供的服务在使用价值上适合满足宾客需要的程度,它直接影响饭店产品的市场销售.所以,抓好服务质量必须饭店上下一齐动作,各个部门互相协作,全体员工真正树立质量第一,质量高于一切的意识.
