我国果蔬加工业发展迅速,特别是近 20 年来,其已成为农村经济的支柱产业.据联合国粮农组织统计,我国果品总产量位居世界前 5 位.随着我国果蔬加工业快速发展,相应的加工技术也得到了快速的发展.本文综述了果蔬加工中真空冷冻干燥技术、超高压技术、红外加热技术、液氮速冻技术、高压脉冲电场技术、纳米技术六种新技术在果蔬加工中的原理和应用.这些技术主要应用于果蔬加工中活性物质的提取、干燥、灭酶、杀菌、储藏、原料品质改良、工艺改进、产品检测等.

Fruit and vegetable processing industry has developed rapidly,
especially in the past 20 years, it has become a pillar industry of the rural
economy . According to FAO statistics, China's fruit production among the
world's top five . With the rapid development of fruit and vegetable processing
industry , the corresponding processing technology has also witnessed a rapid
development. In this paper, fruit and vegetable processing vacuum freeze-drying
technology, ultra-high pressure technology, infrared heating technology, frozen
in liquid nitrogen technology, PEF , nanotechnology six kinds of new technology
in the fruit and vegetable processing principles and applications . These
technologies are mainly used in fruit and vegetable processing to extract the
active substance , drying, enzyme inactivation , sterilization , storage, raw
material quality improvement , process improvement, product testing and so
on.
